Grilled Maui Chicken & Tropical Fruit Salsa

4-6 chicken breasts

Marinade Ingredients:
1/4 C water
1/4 C gluten-free soy sauce
12 oz. pineapple juice
3/4 C sugar
1/8 C lemon juice

Tropical Fruit Salsa
1/2 C pineapple, mango, papaya, red bell peppers, green bell peppers, red onion (diced into 1/4″ cubes)
4 Tbs. white vinegar
1/2 C brown sugar
pinch ground nutmeg
3 tsp. lime juice
black pepper
1 tsp. jalapeño (finely diced)
3 Tbs. cilantro (chopped)

Combine first 5 ingredients & whisk until dissolved. Pour marinade over chicken and marinate in refrigerator for 8 hours. Grill.

Tropical Fruit Salsa:
Combine all fruit, vegetables & herbs in a bowl. Set aside.
In a separate bowl, add the remaining ingredients and whip with a whisk until well combined and dissolved.
Pour liquid over fruit & vegetables & toss until well combined.

Serve salsa with grilled chicken.
