Lindsay’s Skinny Macaroni & Cheese

Ingredients:
8 oz gluten free macaroni, uncooked
2 cups cottage cheese
1 cup plain Greek yogurt
1 large egg, slightly beaten
3 cups cheddar cheese, grated
1 tsp. salt

Directions:
Cook macaroni according to package; drain. Mix all ingredients, reserving 3/4 cup cheddar cheese to sprinkle on top. Bake in buttered baking dish until bubbly on top; approximately 35 minutes at 350°C.
