Mom’s Gaspacho

Ingredients:
3 tomatoes (seed removed and cut into 1/4″ pieces)
1 pepper (yellow or green) seeded & cut into 1/4″ dice
2 cucumbers (1 peeled, 1 with skin – remove seeds and cut into 1/4″ dice
1/2 or 1 sweet onion (depending on size) diced
2 garlic cloves – crushed
1/4 cup champagne vinegar
2 tsp. sea salt, dash pepper

5 cups tomato juice (I prefer low sodium V8)
Tabasco sauce (to taste)
Avocado (for garnish)

Directions:
Combine first 7 ingredients in large bowl and marinate 5 minutes. Add tomato juice  & 8 ice cubes and dash of Tabasco sauce to taste. Cover & refrigerate at least 4 hours.

Top with chopped avocado.
