Carrot + Nutmeg Puree

2 pounds carrots
1/4 teaspoon ground nutmeg
1 cup water (reserved from steaming)

1.  Peel & chop the carrots into small pieces.

2.  Fill a medium saucepan with about 2 inches of water.  Heat on medium heat until the water begins to bowl.

3.  Place the carrots in a steamer basket over the boilin water and cover for 7 – 10 minutes, or until the carrots are tender.  Let them cool slightly.

3.  Place the carrots and nutmeg in a blender, adding water in 1/4 cup increments.  Puree until you reach your desired consistency.

Servings: 25 ounces
