Peas + Zucchini + Mint Puree


2 organic medium sized zucchini
2 cups frozen peas
8 mint leaves

1. Fill a medium saucepan with about 2 inches of water. Heat on medium heat until water begins to boil.

2. Chop the zucchini into slices and place in a steamer basket over boiling water.  Cover and steam for 5 minutes.

3. Take the zucchini off the heat and let cool. Add peas to the water you used in your steamer and heat on low for another 3-5 minutes. Strain.

4.  Add peas, zucchini and mint to blender or food processor and blend until smooth.

Servings: 15 ounces
